What I ultimately love about the colder seasons are the comforting dishes. It doesn’t need to be a “light ” salad . Nope. It can be something more richer, something with a little bit more butter or cream and therefore more flavor. Fat is a flavor enhancer for sure. “Butter is life” or what is your opinion on that?!?? And no. We don’t eat calorie rich dishes every day. But when I’m cooking fancy there are a little bit more calories involved than usual. But not much. Promised !

Searing the tenderloin and making that delicious calvados sauce

  • I start out with cleaning the tenderloin which means getting rid of the fat and trim off the sinews.
  • After that I salt and pepper the tenderloins generously. Searing them for 30 seconds on each side in a very hot pan with some heated oil.
  • O’m turning down the heat to medium the heat and take out the tenderloins . Let the tenderloins cool completely.
  • When the tenderloins are out of the pan I’m deglazing the hot pan with the Calvados. Whisking constantly until the alcohol is evaporated.
  • Now Im adding the clear stock and let the sauce reduce a little bit.
  • At last I’m turning off the heat and whisk in the butter cubes one at a time until everything is a hom*ogenous sauce. Salt and pepper the sauce eventually.

Tenderloin in puff pastry – Almost finished with the prepping

First things first! Heat the oven to 200°degree Celsius circulation.

  • I always put the rolled out puff pastry on a baking paper into the freezer first for about 5-10 minutes because then its less sticky when working with it.
  • Im cutting off some of the length of every puff pastry sheet and reserve this for the cut out decoration .
  • I put the sheets on the counter and drizzle some AP flour onto the middle. that way the bottom gets less soggy while baking.
  • Now I’m putting the cooled tenderloin into the middle of the sheet and arrange the caramelized onions and apple filling on top with the fresh sage.

Ok. Almost done with the prepping.

  • After the filling is on top I pull one side cautiously into the middle and put some egg wash on the edges of that side. Then I pull the other side over it. Sticks better .
  • Pressing the edges together and brushing some more egg wash on top before I arrange the cut out ornaments for decoration on top. Brush the ornaments with some more egg wash
  • At last I transfer the Tenderloin puff pastry logs with the baking sheet into a baking dish and arrange the cored apple halves on both sides of the log.
  • Finally I bake it for 30 minutes. But this really depends on your oven.

Before I serve that baked tenderloin I put some lingonberry jam onto the middle of the baked apple halves. But cranberry jam is as good of a replacement ?.

What would be a perfect side for that fancy tenderloin?

In my opinion a classic potato side and some vegetables are always a good thing. But if you want fancy all the way I can recommend delicious potato rosemary stacks and Ras-el-hanout spiced carrots. ?❤️

FAQs

Is it better to sear pork tenderloin before baking? ›

Sear + Roast

This cooking method is a surefire way to make moist and juicy pork tenderloin without much fuss. Searing the meat first gives it that golden-brown crust before a quick roast in the oven finishes it off. It's an easy, crowd-pleasing meal for any night of the week.

What wine goes with pork tenderloin and apples? ›

Roasted pork tenderloin and apples is a classic dish that is delicious with rich white wines or light-bodied red wines. Chenin Blanc or Chardonnay are great options. For red wines, Pinot Noir with pork is a tried-and-true combination that works well here.

What white wine goes with pork tenderloin? ›

Chardonnay is another classic wine pairing for pork tenderloin. It is a white wine with a buttery, oaky flavor that is an excellent match for the mild flavor of pork. The wine's creamy, buttery consistency pairs perfectly with the tender texture of the pork, making for a pleasant mouthfeel.

What temperature is pork tenderloin done at? ›

Cooking Temperature of Pork

The safe internal pork cooking temperature for fresh cuts is 145° F. To check doneness properly, use a digital cooking thermometer. Fresh cut muscle meats such as pork chops, pork roasts, pork loin, and tenderloin should measure 145° F, ensuring the maximum amount of flavor.

What is the best method of cooking pork tenderloin? ›

Sear pork, turning occasionally, until browned on all sides, 6–8 minutes. Transfer skillet to oven (if you don't have an oven-safe skillet, transfer pork to a baking dish) and roast, flipping pork halfway through, until an instant-read thermometer inserted into the thickest part registers 140°, 14–18 minutes.

Is it better to cook a pork tenderloin at 350 or 400? ›

Why do apples pair well with pork? ›

Putting pork and apples together could also have to do with an element of terroir. Before industrial farming, it wasn't uncommon for farmers to allow their pigs to graze in apple orchards, where they would chow down on fallen fruits.

What drink goes with pork tenderloin? ›

The effervescence and acidity of sparkling wine can cut through the richness of pork tenderloin, while its bright fruit flavors offer a refreshing balance. Champagne, Prosecco, and Cava are all excellent options for pairing with pork tenderloin.

Is red or white wine better with pork? ›

What is the best Italian wine with pork tenderloin? ›

Its vibrant acidity and rustic charm perfectly match Italian herbs and tomatoes.

Does Cabernet Sauvignon go with pork tenderloin? ›

If fresh pork has reached 145°F (62.8 °C) throughout, even though it may still be pink in the center, it should be safe. The pink color can be due to the cooking method or added ingredients.

How to tell when pork tenderloin is done without a thermometer? ›

One way to determine your porks' doneness is by the color of the juices that come out of it when you poke a hole in it with a knife or fork. If the juices run clear or are very faintly pink, the pork is done cooking. If they're mostly or entirely pink or red, it's best to continue cooking.

How long to cook pork tenderloin in oven at 350 without? ›

How long to cook pork tenderloin in oven at 350°F: Placed in a baking dish and cooked uncovered, a pork tenderloin will take around 20-27 minutes at 350°F.

Is it better to sear before or after roasting? ›

It's not really necessary to sear your roast before cooking, but caramelizing the surface gives the cut an incredible depth of flavor, enhanced with the complex layers of nutty caramel and coffee-like bitterness that meat-lovers find delicious.

Should you sear pork before cooking? ›

Most pork cuts will have at least one surface with a “fat cap”. Always start searing the meat with the fat cap down, in order to get the fat crispy and to render some of fat into the pan which helps brown and flavor the remaining surfaces. In addition, make sure to sear surfaces with bones as well as meat.

Does pork tenderloin get more tender the longer you cook it? ›

Quite the opposite, actually! Pork tenderloin should be cooked quickly and then left to rest to ensure it stays tender. If you cook it too long, it will become tough and chewy.
