Fried Shrimp

Fried shrimp is a delicious dish consisting of shrimp that is coated in egg wash and coated in some sort of breading that is then deep-fried until browned and cooked throughout. The origin of fried shrimp is a little murky as some claim it was invented in the early 1900s in Japan while others say it did not become known until after WWII.

Fried shrimp can come in an assortment of sizes and breading and is very popular in Southern cuisine. It serves well as an appetizer or as the main protein to any entrée meal.

Breading Variations

There are many options when it comes to dredging the shrimp after they have been coated in the egg wash. Here are some of the most popular things to coat them in, and will not alter the cooking times and temperature.

  • Breadcrumbs: You can use seasoned breadcrumbs to coat the shrimp.
  • Panko: Season up the Japanese panko breadcrumbs and coat the shrimp in them completely before frying.
  • Flour: All-purpose flour is great to use for this recipe.
  • Cornmeal: You may use all cornmeal, or a combination of cornmeal and flour when coating the shrimp.

  • If the egg wash is well seasoned, then there is no need to season the breadcrumbs. However, if you like strong salty flavors then you may season both.
  • You can also use your favorite Cajun or blackened seasoning.
  • I like to use peanut oil for frying.

I made this last night and it was delicious. I used the same coating for a piece of cod for my husband since he can’t have shrimp. The co*cktail sauce is best I have ever had. Can’t wait to try more of your recipes. So glad I found you on Facebook.

You will still need a good amount of oil but yes you could pan fry. As far as air fryer, no clue, I don’t mess with those.

        FAQs

Why do you soak shrimp in milk before frying? ›

Should I Soak My Shrimp? This one comes down to the chef's preference. Some prefer to soak seafood in milk before cooking to keep it from tasting too fishy. If you choose to soak your shrimp, you should do so with whole milk for at least 10 minutes.

What is the best oil to fry shrimp in? ›

Deep fry shrimp by preheating (canola, vegetable, or peanut) oil to 375 degrees F. Carefully place a small amount of breaded or battered shrimp in cooker. Fry shrimp 2 to 3 minutes, depending on size of shrimp, until golden brown outside and opaque in the center.

How do you get breading to stick to shrimp? ›

You want to make the shrimp as dry as possible and remove any excess moisture prior to seasoning and frying. Once the shrimp are dredged in the seasoning mix, let them rest for 10-15 minutes while the oil heats up. This helps the batter stick to the shrimp when frying!

Why isn't my fried shrimp crispy? ›

If your shrimp are not crispy, it could be because the oil temperature was too low or you overcrowded the pan. Fry the shrimp in small batches and make sure the oil temperature is hot enough for the shrimp to fry evenly and become crispy.

Why add baking soda to shrimp before cooking? ›

Alkaline baking soda slightly alters the pH of the shrimp, making them as plump and succulent as lobster and resistant to overcooking. The brine also causes the meat to pull away from the shells while cooking, so you get all the great flavor of shell-on shrimp without the hassle.

How long can you soak shrimp in milk? ›

To remove the flavor or taste out of the shrimp or fish you bought, soak it in milk for about a half hour before cooking.

Is it better to fry shrimp in oil or butter? ›

The answer is both. Kendra likes to sear shrimp in olive oil, then add butter at the end, spooning it over the shrimp (a.k.a. basting) as the butter melts. Heat a stainless-steel or nonstick skillet over medium-high heat.

How do you fry shrimp without batter falling off? ›

How do you keep the batter from falling off shrimp? To keep the batter from falling off shrimp, pat the shrimp dry before tossing with the flour. By coating the shrimp in flour and then dipping in egg whites, you create a sticky coating for the breadcrumbs to adhere to. So, don't be tempted to skip the flour step!

How do you keep shrimp straight when frying? ›

Make a second incision about an inch over from the first one. These are the “release cuts” that will keep the shrimp elongated during the cooking process. Depending on how large or small your shrimp are, the location of each incision will vary. If your shrimp are very long, you can make an additional slit or two.

Why does my breading fall off my shrimp? ›

After you mix together the ingredients for your coating, always be sure to pat your shrimp dry before you dip them in your flour dredge, egg, and breading or batter mixture. Shrimp tend to hold onto moisture, and water on their exterior causes coatings to slide off.

Why won t panko stick to shrimp? ›

The trick to making the breading stick is to make the shrimp as dry as possible. Not dried through and through; just the outside. And here's a problem: If you are starting with frozen shrimp, you'll notice how watery they get when thawed. Go figure: the shrimp, like us, are mostly water.

How do you keep fried shrimp crispy? ›

Oven-warming for long-lasting crunch: To keep crispy dishes warm in the oven without compromising texture, place them on a wire rack and bake at 170 to 200 degrees. This method preserves the crunch for about 15 to 20 minutes, ensuring no crispness is lost when served.

Do you rinse fish after soaking in milk? ›

Online research had recommended letting the fish soak submerged in milk for around 20 minutes, before rinsing and cooking in your preferred fashion.

What does soaking seafood in milk do? ›

Before cooking, soak the fish in milk for 20 minutes

In this scenario, the protein in the milk binds with the compounds that cause that fishy odor, in essence extracting if from the fish.

Why put shrimp in milk? ›

Milk counteracts this odor because milk contains casein, which bonds with the trimethylamine and effectively draws the stinky smell out of the fish. If you don't have milk on hand, Epicurious reports that another way to get rid of fishiness is to top the seafood with lemon juice before cooking.

Why do you soak seafood in milk? ›

We've found an easy way to eliminate the smell: Soak the fish or the shellfish meat in milk for 20 minutes and then drain and pat dry. The casein in milk binds to the TMA, and when drained away, it takes the culprit that causes fishy odor with it. The result is seafood that's sweet smelling and clean-flavored.
